Cranberry Scones

Another favorite {and healthy} recipe that I make often -- especially when I'm dieting --  is the Cranberry Scone.  It's a wonderful breakfast food, mid-morning snack or a wonderful dessert served with coffee or tea.  The best part of all is that it only has 4 Points in the new Weight Watchers Points Plus program.  {Love} it!

printable recipe {here}
Ingredients:
Cooking Spray
2 cups all-purpose flour
1 tbsp baking powder
1/4 tsp baking soda
1/3 tsp table salt
1/4 cup sugar
1 large egg, beaten
1 cup buttermilk
1/4 cup unsalted butter, melted
1/4 cup dried cranberries

Instructions:
Preheat oven to 400˚ F.  Coat a cookie sheet with cooking spray.

In a medium bowl, combine flour, baking powder, baking soda, salt and sugar; mix well and set aside.  In another bowl, whisk together egg, buttermilk and melted butter.  Stir wet ingredients into dry ingredients until just combined; fold in cranberries.

Drop 12 equal two-inch mounds of batter on prepared cookie sheet about 1-inch apart.  Bake until tops just start to turn golden, about 12 to 15 minutes.  Yields 1 scone per serving. WW Points Plus Value: 4 Points.

Notes:
You  can use any dried fruit you like such as strawberries, blueberries, raisins, cherries.

  1. Kelly, I was so excited because I had all the ingredients, that is until I got down to buttermilk - shoot! And we've declared today Pajama Day so I'm not going any where:-) I'm looking up a substitute - I think if I add vinegar to regular milk, it should be ok, but I'll let you know!
